Chicken Fruit Wrap

Try this alternative wrap for a refreshing and light lunch or after school snack:
Chicken Fruit Wrap

Ingredients (for one serving, adjust as needed)
    ½ cup chopped cooked chicken
    3 T chopped Fuji apple
    2 T chopped black or red grapes
    1 T mayonnaise
    2 t honey
    Iceberg or Romaine lettuce

1.  Wash and cut up the apple and grapes.
2.  Chop up the chicken and mix with the fruit.
3.  Mix in the mayonnaise and honey (or your favorite salad dressing)
4.  Spoon into an open lettuce leaf, roll and serve.

RECIPE NOTE:  If you’d like, you can also mix in 1-2 T of crunchy peanut butter.
