What's for dinner?

What's for dinner this week?

Sunday:  Thanksgiving in February!  I'm roasting a turkey and making the traditional sides of mashed potatoes, butternut squash and stuffing.  It's such an easy meal and we'll love the leftovers for lunches this week.

Monday:  Turkey soup.  I'll saute up some onions, celery, carrots, and garlic.  Then I'll add some broth and left-over turkey (and maybe a can of corn if I have one) and make some whole grain noodles on the side.  I like to make the noodles on the side so everyone can choose their soup/noodle ratio.  I also prefer pouring the soup over the noodles so the noodles don't get too soft.


Tuesday:  Soy Glazed Salmon

1/4 cup packed light-brown sugar ,1/4 cup olive oil, 3 tablespoons soy sauce, 2 tablespoons fresh lemon juice, 2 tablespoons dry white wine, or water, 2 pounds salmon fillet, lemon wedges for serving.  Preheat oven to 400 degrees and bake for 15 to 20 minutes. Serve with lemon wedges.

Wednesday:  Chili-grape meatballs with brown rice and green veg.  

Yup, we have a busy Wednesday, so I'm either going to crock-pot this yummy meal or let it simmer on the stove.  Recipe here.

Thursday:  Broccoli-Cheese Stuffed Tilapia

We have a little more time on Thursday nights, so I'm going to make this fish dish: 

4-ounce fresh or frozen thin, white fish fillets, 1 cup cut broccoli, 1 beaten egg, 1 8-ounce container of soft-style cream cheese with chives and onion, 1/4 cup grated Parmesan cheese, 3/4 cup herb-seasoned stuffing mix, 2 tablespoons milk, 2 tablespoons dry white wine.  Full recipe here.
