Grilled Salmon over Lentil-Tabbouleh

Grilled Salmon over Lentil-Tabbouleh

Are you looking for a super-flavorful, hearty, healthy meal for tonight?  Try this recipe from The Runner's World Cookbook.

In a small pot, combine 1 cup lentils with 3 cups water, cover and bring to a boil.  Reduce the heat to low and simmer for 15 minutes.







Meanwhile, in a large bowl, toss the following together:
  • 1/4 cup olive oil
  • 1/2 cup fresh lemon juice
  • 1 clove garlic, minced
  • 4 scallions, thinly sliced
  • 1 cup chopped flat-leafed parsley (this is an important ingredient!)
  • 1/2 seedless cucumber, diced
  • 1/2 pint grape tomatoes, quartered or halved
  • 1 teaspoon salt

When the lentils are cooked, drain them, and then add to the bowl and toss to combine. 

Serve with a beautiful portion of grilled salmon (squeeze some lemon juice and a pinch of salt on your salmon and grill to your liking).  Garnish with a thin slice of lemon.
