Grilled Vegetable Sandwiches

Grilled Vegetable Sandwiches

The flavors in this sandwich are so good!  And you feel so good after eating this meal.

1.  Wash and slice the following (you can really use any vegetables that you have on hand):
  • 1-2 zucchini
  • 1-2 yellow squash
  • 1 green pepper
  • 1 red, yellow, or orange pepper
  • 1 red onion
Toss the sliced vegetables in a large bowl with a little bit of olive oil and salt-and-pepper to taste.

Arrange the vegetables on aluminum foil and grill to your liking.

Meanwhile...

2.  Prepare the dressing by mixing the following in a small bowl:
  • 1/3 cup mayo
  • juice from half a lemon
  • 1-3 minced garlic cloves
3.  Prepare your bread:
  • Slice your favorite Ciabatta loaf (or any Italian bread that you like) into semi-thin slices.  Arrange the slices onto an aluminum foil-lined baking sheet.
  • Slather on the dressing mixture onto each slice.  
  • Top with crumbled feta and then broil until just barely lightly brown.
4.  Assemble your sandwiches by placing as many slices of vegetables on one side of the bread and topping with another slice. 

5.  Serve with sweet potato fries and enjoy!
