How to Use the Leftovers from your Tourned Potatoes: Potato Skins!

 Congratulations to the New England Patriots for their win yesterday!  We're looking forward to Superbowl Sunday where the Patriots will match up against the Seattle Seahawks... but what to eat?

We found the perfect use for your peeled potatoes, so if you're making stew, mashed, or any potato dish this week that calls for you to peel or tourne some potatoes--hang on to those skins!

To tourne a potato, make a smooth and purposeful cut from one end to the other to make a seven-sided little beauty.  Now that we have a use for the potato pieces that you're cutting off, feel free to cut as much as needed to get the perfect shape--you'll use the left overs in the recipe below.

Potato Skins:
1.  Preheat your oven to 375 degrees.

2.  Toss your potato skins and cuttings with a drizzle of olive oil and season with salt and pepper.

3.  Line a baking sheet with aluminum foil and spray with non-stick spray.  Spread your potato skins onto the pan.
 

4.  After baking for about 20 minutes or until the potatoes are pretty much cooked, sprinkle some shredded cheese on top and then broil for 2-3 minutes.
 

5. Serve with your choice of hot sauce, salsa, chives, bacon bits and/or sour cream.
