Southwest Pasta


This one is a surprisingly easy and delicious meal.  It's become one of my standard go-tos in the menu rotation.

Southwest Pasta:
1. In a large pot add the following:
  • 1 box of rotini or your favorite short noodle
  • 1 can of corn (you can use frozen if you prefer)
  • 1 green pepper, sliced and cut in half
  • 1 small red onion, sliced
  • 1 can of chopped tomatoes with chilies
  • 1 package of taco seasoning
  • 2 tsp extra virgin olive oil
  • 4 cups chicken broth
Cover, bring to a boil, and let boil gently for about 10 minutes.

2.  Turn the heat off and then stir in 1 can of rinsed and drained black beans and 1/4 cup shredded cheese.  
Let this amazing combination rest for about 5 minutes.
3.  Serve and enjoy.
