Happy St. Patrick's Day- Irish Soda Bread

Happy St. Patrick's Day!  

 Irish Soda Bread

Bringing this festive bread recipe back to the front today!  Try it as part of your St. Patrick's Day this year!

Combine these dry ingredients in a large bowl:
  •  3 1/2 cups flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt

In a separate smaller bowl:
  • beat 2 eggs, then
  • mix in 1 pint of sour cream
Add the egg mixture into the dry ingredients and stir with a wooden spoon until you need to knead it with your hands.

When well-combined, add in:
  • 3/4 cup raisins
  • 1/2 tablespoon caraway seeds (optional, this year I added a few shakes of nutmeg and cinnamon...)

Shape into a round mound, place on a lightly floured piece of parchment paper on a baking sheet and lightly slice an "x" across the top.

Bake for 45-50 minutes at 350 degrees.

When slightly cooled, slice and enjoy.
